Jax Fish House Reopens & The Post Chicken & Beer Comes to KC

Jax will reopen with the exciting addition of takeout family seafood meals and a fresh seafood retail market.

Meanwhile, The Post Chicken & Beer will bring its award-winning Colorado fried chicken eatery to Kansas City.

After a months-long closure due to Covid-19, Jax Fish House will reopen on Wednesday, August 5. “Like most others in our hard-hit industry, we have had time during the pandemic shut down to step back, reevaluate, and pivot a little bit,” says Big Red F Restaurant Group chef/founder Dave Query. “We’ll continue to serve our award-winning sustainable seafood, but we’ve spent a lot of time ‘beefing’ up the to-go portion of our menu with family meals that travel well and we are also adding a seafood market component as well.

While favorites such as the Calamari, Peel N’ Eat Shrimp, and our vast oyster bar offerings remain, culinary director Sheila Lucero has added many new items to the dine-in menu. The Jax menu will be available for takeout, curbside pickup, and delivery. Jax has also added a seafood market that will sell the same sustainably sourced, 100% Monterey Bay Aquarium Seafood Watch-approved seafood that we use at the restaurant for the home cook.

Additionally, the Big Red F Restaurant group is also bringing a new fried chicken restaurant, The Post Chicken & Beer, to KC. “We opened The Post Brewing Company in Colorado in 2014 and have since grown to four (soon to be five) locations in our home state,” Dave says. “We love KC and have been looking for a space here for The Post for years. When the pandemic hit, we saw how well fried chicken lends itself to takeout service and we knew the time was right to open in KC, even without a brick-and-mortar location.” The Post will only feature to-go, curbside, and delivery service while we find the right space for our dining room.

The Post’s unique fried chicken recipe was developed by Chef & Partner Brett Smith after years of extensive fried chicken research (a.k.a. eating fried chicken all over the country). The Post starts with humanely raised, fresh and all-natural chicken, which is brined for hours in milk, dredged in a seasoned gluten-free flour blend, and then pressure fried until juicy inside and crispy golden brown on the outside. It’s served with house pickles and gravy and an array of farm-fresh sides. 

The Post’s fried chicken has been featured on Diners, Drive-Ins, and Dives and Food Paradise, and has been named the best fried chicken in Denver by 5280 Magazine, Westword, 303 Magazine, and many other Colorado publications. “We can’t wait to introduce KC to the fried chicken love that has been so well received here in Colorado,” Brett says.
